Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 1/4 cup chopped white onion
  • 1/2 cup sweetened dried cranberries
  • 1/4 cup chopped pistachio nuts
  • 1 1/2 cups cranberry juice (cranberry juice cocktail, heated to a simmer)
  • 1 cup couscous
  • 2 scallions green parts only
  • Salt and pepper, to taste

How to Make

  • Step 1: In a medium saucepan add olive oil.

  • Step 2: Add the white onion, sweetened dried cranberries and pistachios, and saute gently over low heat until onion is translucent and slightly fragrant.

  • Step 3: Add the couscous and the warm cranberry juice cocktail.

  • Step 4: Stir with a fork to combine, cover.

  • Step 5: Let sit for 10 minutes.

  • Step 6: Add the scallions. Fluff with fork.

  • Step 7: Season, to taste, with salt and pepper. Toss gently to combine.

  • Step 8: Turn into serving dish.

  • Step 9: Serve hot.
