Step 1: In a medium saucepan add olive oil.
Step 2: Add the white onion, sweetened dried cranberries and pistachios, and saute gently over low heat until onion is translucent and slightly fragrant.
Step 3: Add the couscous and the warm cranberry juice cocktail.
Step 4: Stir with a fork to combine, cover.
Step 5: Let sit for 10 minutes.
Step 6: Add the scallions. Fluff with fork.
Step 7: Season, to taste, with salt and pepper. Toss gently to combine.
Step 8: Turn into serving dish.
Step 9: Serve hot.
