"A nice colorful salad for the holidays, or a buffet. Make the day before serving. Cook time is chill time. Can also be made in a gelatine mold and turned out onto a plate after it is set."

Step by Step Method

Step 1

In a large bowl, mix gelatin and sugar; add boiling water and stir until gelatin is completely dissolved.

Step 2

Add juice; chill in refrigerator until mixture has consistency of unbeaten egg whites.

Step 3

Fold in apple, cranberries, celery, and walnuts.

Step 4

Pour into a 8-inch square pan; cover with plastic wrap and chill in refrigerator until firm.

Step 5

To serve, cut into squares.

Step 6

Serve with a dollop of mayonnaise or sweetened whipped cream.

Fantastic. Made for our holiday meal. It was light and refreshing among all the heavier sides. I enjoyed it the next morning for breakfast too! I used craisins in addition to the fresh cranberries. I made this to bring to my mom's house for Thanksgiving and it was happily enjoyed with our dinner. Everyone who tried it loved it and said we need to add it to our holiday menu from now on. Looks like I will be making this from now on!
