Step 1: In a large bowl, mix gelatin and sugar; add boiling water and stir until gelatin is completely dissolved.
Step 2: Add juice; chill in refrigerator until mixture has consistency of unbeaten egg whites.
Step 3: Fold in apple, cranberries, celery, and walnuts.
Step 4: Pour into a 8-inch square pan; cover with plastic wrap and chill in refrigerator until firm.
Step 5: To serve, cut into squares.
Step 6: Serve with a dollop of mayonnaise or sweetened whipped cream.
