" This is a lovely omelette to serve to company for brunch. It makes a very satisfying dinner too. The 2 egg version posted here may serve two persons or one with a hearty appetite. Use real crab as a special treat."

Step by Step Method

Step 1

Beat together the eggs, milk & sour cream/cottage cheese.

Step 2

Chop your onions, brie and crab.

Step 3

Heat a nonstick pan (with a lid) over medium heat, lightly spray with oil, pour in the eggs, spread the eggs evenly over the pan, cover with lid.

Step 4

After 2 minutes add crab, green onions & brie to one side of the omelette. Season with salt and pepper. Return lid to pan.

Step 5

All stoves differ so be careful that the omelette is not getting overcooked on the bottom. After total time of 5 minutes flip the side without the filling over the filling side. Serve.
