Step by Step Method
Step 1
In a skillet cook the bacon; drain bacon on paper towels and set aside.
Step 2
In skillet, add peppers and stir fry for a few minutes in the bacon fat and then add salt, pepper, chile powder and parsley.
Step 3
In a baking dish combine all the ingredients(peppers - hominy) except for the bacon.
Step 4
Crumble bacon over the top of the mixture and keep warm in oven until serving time.
