Ingredients

The ingredients are:
  • 2 bacon slices, cut into small pieces
  • 4 tablespoons green bell pepper, chopped
  • 4 tablespoons red bell pepper, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon chile powder, mild
  • 1 teaspoon parsley, chopped
  • 1 teaspoon corn, frozen, cooked and drained
  • 1 cup white hominy, canned

How to Make

  • Step 1: In a skillet cook the bacon; drain bacon on paper towels and set aside.

  • Step 2: In skillet add peppers and stir fry for a few minutes in the bacon fat and then add salt, pepper, chile powder and parsley.

  • Step 3: In a baking dish combine all the ingredients(peppers - hominy) except for the bacon. Crumble bacon over the top of the mixture and keep warm in oven until serving time.
