This easy & tasty corn side dish was an easy sell to my kids. The diced pimentos were a fun ingredient -- added some color to the dish and I don't typically use them, so I felt fancy using them. Loved how easy this was to prepare, how colorful it was to present and how fast it disappeared from the table.

We enjoyed this recipe as an accompaniment to pork chops. I used garlic powder for the seasoning salt and skipped the pimentos but used a whole green pepper instead of the amount specified. A nice side dish which we enjoyed. Thanks for sharing!
