Step by Step Method
TO MAKE CORN FRITTERS
Step 1
Whisk eggs, egg yolk, sea salt and flour until smooth and combines and then fold in corn, fetta, fennel, onion, dill, lemon zest and juice and season with salt and pepper and then set aside.
TO MAKE SMASHED AVOCADO
Step 2
Spoon avocado flesh onto a small plate and add coriander, lemon juice and a pinch of salt and pepper and mash roughly with a fork and then set aside.
Step 3
Preheat grill/broiler on high.
TO MAKE COFFE AND MAPLE BACON
Step 4
Combine coffee and boiling water in a small bowl and stand for 2 minutes to allow coffee to dissolve and then add maple syrup and stir to combine.
Step 5
Place the bacon on a foil-lined baking tray and brush each side of the bacon with the coffee and maple glaze and gill/broil bacon on both sides until crispy.
Step 6
Heat a little oil in a large frying pan over medium high heat and spoon 4 equal portions of the fritter batter into the pan and shape into a small rounds with the back of a spoon and cook for 3 minutes or until golden brown underneath and then flip and cook for a further 2 to 3 minutes or until golden brown and cooked through and repeat with remaining batter.
Step 7
Serve 3 to 4 corn fritters per person with a large spoonful of the smashed avocado on top and a side of the coffee and maple bacon.
