"Originally I found this on a bag of mini chocolate chips. Two of my favorite things, chocolate and coconut!"

Step 1

Preheat oven to 350 degrees. Spray baking sheet with non stick spray

Step 2

Combine all ingredients in bowl, mix until well blended.

Step 3

Drop by rounded teaspoonfuls, 2 inches apart, onto baking sheet. Press to flatten slightly.

Step 4

Bake 10-12 minutes or until light golden brown

Step 5

Let cool 1-2 minutes before placing on rack to cool completely.

If you love coconut and chocolate you will love these! I dropped the mixture on top of chopped pecans for added crunch and they were so yummy. Nuts make everything better!

These wowed the sweets lovers at our family birthday gathering this past weekend! Being pressed for time I made them a little larger - the sweets lovers said they were just perfect, I suspect your spoonful would be the perfect size for these little gems! The recipe went home with the sweets lovers - which is a real compliment for a recipe!
