Step 1

Heat rice according to packet directions and then transfer to a large saucepan.

Step 2

Add coconut milk, milk, brown sugar and vanilla and place pan over a medium heat and stir until sugar is dissolved and then bring to a boil and boil, covered, stirring occasionally, for about 15 minutes, or until thickened.

Step 3

Halve passionfruit and remove pulp.

Step 4

Divide warm rice among four dishes. Spoon over passionfruit. Decorate with coconut.
