The ingredients are:
  • 450 grams rice, (family-size white microwaveable rice packet specified)
  • 400 ml can coconut milk
  • 1 cup milk
  • 1/4 cup brown sugar, firmly packed
  • 1 teaspoon vanilla bean paste
  • 5 fresh passionfruit
  • 1/2 cup flaked coconut, toasted

How to Make

  • Step 1: Heat rice according to packet directions and then transfer to a large saucepan.

  • Step 2: Add coconut milk, milk, brown sugar and vanilla and place pan over a medium heat and stir until sugar is dissolved and then bring to a boil and boil, covered, stirring occasionally, for about 15 minutes, or until thickened.

  • Step 3: Halve passionfruit and remove pulp.

  • Step 4: Divide warm rice among four dishes. Spoon over passionfruit. Decorate with coconut.
