"So easy, but still a classic. Crisp bacon, tomato, onion and my secret ... a light drizzle of some of the bacon dripping with red wine vinegar for a little extra flavor. My favorite dressing, I just posted here, "A Simple Thousand Island Dressing." Just a small spoon of dressing makes for a wonderful salad."

Step by Step Method

Step 1

Bacon ... Add the bacon to a small non stick pan over medium heat. Slowly render the bacon until it is crispy golden brown. Once the bacon is done, transfer to a plate lined with a paper towel to drain. You should end up with 1-1 1/2 tablespoons of bacon drippings. Reserve the drippings for the dressing.

Step 2

Dressing ... Add the bacon drippings to a small bowl or dish along with the olive oil, vinegar and Italian seasoning and mix well. Brush this over the cut sides of the iceberg lettuce. Just a light brush is all it takes, and season with salt and pepper.

Step 3

Serve and Plate ... Top the iceberg wedge with 2 tomato slices and season the tomatoes with salt and pepper; next the onion slices and finish with your favorite dressing. I like to serve it with "A Simple Thousand Island Dressing," but a nice creamy blue cheese is also very nice. ENJOY!

I have made this for lunch several times and I really love it when I have it! My daughter, who is 8, always tries to steal my tomatoes, so now she has one with me and loves it too!

I made this to go with our southern fried chicken and it was a great salad. My son asked for extra bacon, so I just cooked up a bit more than called for. I made Gorgonzola dressing to have on it and also made your dressing. I dressed half with each one. Your dressing was great and I loved the bacon drippings. Great flavor. Such a nice change from my plain old salads. My son ate every bit of his and told me I can make it again. He liked it!
