Ingredients

The ingredients are:
  • 1 head iceberg lettuce, cut in 6 wedges (depending on the size)
  • 8 slices thick sliced bacon, diced and sauteed (don't use low fat or turkey, you want some of the drippings for this salad)
  • 2-3 medium ripe tomatoes (12 slices)
  • 1 large onion, thin sliced
  • Dressing:
  • 1 tablespoon bacon drippings
  • 1 teaspoon olive oil
  • 1 teaspoon white wine vinegar
  • 1/4 teaspoon italian seasoning
  • Salt
  • Pepper

How to Make

  • Step 1: Bacon ... Add the bacon to a small non stick pan over medium heat. Slowly render the bacon until it is crispy golden brown. Once the bacon is done, transfer to a plate lined with a paper towel to drain. You should end up with 1-1 1/2 tablespoons of bacon drippings. Reserve the drippings for the dressing.

  • Step 2: Dressing ... Add the bacon drippings to a small bowl or dish along with the olive oil, vinegar and Italian seasoning and mix well. Brush this over the cut sides of the iceberg lettuce. Just a light brush is all it takes, and season with salt and pepper.

  • Step 3: Serve and Plate ... Top the iceberg wedge with 2 tomato slices and season the tomatoes with salt and pepper; next the onion slices and finish with your favorite dressing. I like to serve it with "A Simple Thousand Island Dressing," but a nice creamy blue cheese is also very nice. ENJOY!
