"I make these "fries" quite often. Since they use so little fat they're a lot healthier than the traditional deep fried version. This recipe was found in Company's Coming Vegetables. Note: The prep time includes 30 minute cold water soak."

Step by Step Method
Step 1
Preheat oven to 475 Fahrenheit.
Step 2
Cut potatoes in half lengthwise, cut each half into 4 pieces (or cut into traditional french fry shape).
Step 3
Soak in cold water for 30 minutes, drain and blot dry. (This removes some of the starch and helps prevent clumping. Skip this step if you prefer.)
Step 4
Place potato pieces into a large bowl, pour oil over potatoes and stir well to coat all pieces.
Step 5
Arrange on a baking tray in a single layer, sprinkle with paprika and bake for 20 minutes, turning after 12 minutes to brown the other side.
Step 6
Sprinkle with salt and enjoy.
