"How old school and classic is this? But some how ... it has stood the test of time - it is still delicious. And personally, I still enjoy them. Salty and sweet, all in one little bite. I actually make mine on the grill. But, the broiler still works great. The key ... DO NOT use a fancy thick cut bacon, use the everyday basic bacon. Maybe 10 minutes to make and 15 if that to cook. Serve hot, warm, or room temperature and enjoy!"

Step by Step Method

Step 1

Pineapple Bites ... Add 1 pineapple chunk to the cut bacon slice and roll. The bacon should wrap around just enough to cover the pineapple 1 time. You don't want the bacon overlapping. Secure with a toothpick. It is seriously that easy.

Step 2

Lay the pineapple bites on a baking rack on top of a sheet pan lined with foil for easy clean up. This is important, so the bacon cooks on all sides. Don't skip this step.

Step 3

Broil ... I use the second shelf down so they don't burn. Broil 5-8 minutes until the bacon is crisp on the first side. Then, remove from the oven, and flip the pineapple bites over. Continue to cook another 5-8 minutes until golden brown; and, the bacon is crisp. Transfer to a plate lined with a paper towel to drain for just a minute; then, move to the serving platter.

Step 4

I prefer to use the grill, or even a grill pan inside would work very well. But, that is just another option for cooking them.

Step 5

Serve ... Plate and serve. They are that easy! Crunchy, Sweet, and Salty all in one - delicious. Classic, but still good. ENJOY!
