"This banana bread recipe uses self-rising flour, which saves a step or two of measuring. The bread isn't super sweet, but it's nutty and flavorful. My husband likes this with butter, my daughter with peanut butter and my son with jelly. Note about dessert topping mixed nuts: they're the tiny chopped up mixed nuts that are often used on ice cream sundaes -- Walmart's Great Value brand carries 4-oz packages, and that's what I use."

Step by Step Method

Step 1

Preheat the oven to 350°F.

Step 2

Liberally grease a loaf pan (I use a non-stick cooking spray).

Step 3

In a large mixing bowl, combine the mashed bananas, butter, vanilla extract and banana extract and mix until all of the ingredients are fully combined.

Step 4

Add the brown sugar and eggs and mix well.

Step 5

Add the self-rising flour, cinnamon and nuts to the wet mixture and mix until just combined. You want all of the flour incorporated, but you don't want to overmix. It's okay if the batter is lumpy.

Step 6

Pour the batter into the greased loaf pan and bake for 60 minutes. (I always check mine at 50 minutes, then check with the toothpick to see if it comes out clean, then put it back in the over for 5 minutes, check again, and then go another 5 minutes until it's baked for 60 minutes. Every oven bakes differently.)
