"I got this recipe from "The Best Slow Cooker Cookbook Ever", but it eventually was "lost" when it morphed into an adaption of my Mom's baked apples. I don't recall her ever using a crock pot, but her creative use of cinnamon candies was common knowledge. These wonderful apples are best as a side to a roast pork meal or served warm w/vanilla ice cream. PLEASE NOTE that your yield & cook time will be variable & depend on the size of the apples you use, the size of your crock pot & the cook setting you choose. To allow for this, I have entered ZERO COOK TIME & given that info in Prep Step #4. Enjoy!"

Step by Step Method

Step 1

Core apples at the stem end, taking care to make a wide opening & not go completely through to the bottom of the apple.

Step 2

Mix sugar, raisins & cinnamon candies. Stuff apples tightly w/the mixture (mounding at the opening as there will be ample stuffing mix) & dot each opening with 1/2 tbsp of butter.

Step 3

Pour water into crock pot, add any leftover stuffing mixture to the water & stir. Place the stuffed apples in the crock pot.

Step 4

Cover & cook on LOW 7-8 hrs, MEDIUM for 6 hrs or HIGH for 3-4 hrs. When cooked, turn setting to KEEP WARM until ready to serve.

Step 5

To serve, place 1 apple in a bowl & add a scoop of vanilla ice cream beside it. Spoon several tablespoons of the crock pot liquid over the apple & ice cream.

NOTE: As stated above, cook time may vary & I suggest fork testing the apples 1 hour ahead of the time you expect them to be finished cooking)
