Cinnamon Apple Cake

"The DH has gone crazy for apple cake and apple slice recipes so here is another one he has asked me to save."

Step by Step Method
Step 1
Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced.
Step 2
Grease and line an 8 or 9 inch round cake tin with baking or parchment paper.
Step 3
In a large mixing bowl, add flour, baking powder, baking soda and sugar and add chopped apple and stir briefly to combine.
Step 4
In a separate bowl, add eggs, vanilla, oil and yoghurt and whisk briefly just to break up the egg yolks.
Step 5
Add wet ingredients to dry ingredients and gently mix with a wooden spoon until combined – but be careful not to over mix and then spoon batter into prepared tin.
Step 6
To make cinnamon topping, combine cinnamon, sugar and butter and mix together until lumpy and wet and sprinkle over cake batter.
Step 7
Bake cake for approximately 30-35 minutes or until a skewer inserted into the middle comes out clean and then transfer cake to a wire rack to cool completely.
Step 8
To make the glaze, mix together sugar and 1 tablespoon of milk and stir until smooth and if the glaze is too thick, add an extra tablespoon of milk and drizzle glaze all over the cake.
Step 9
NOTE - if you cannot get baking soda (I know I can't) use 1 to 2 teaspoons of baking powder for each 1 teaspoon of baking soda.
