Step 1: Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced.
Step 2: Grease and line an 8 or 9 inch round cake tin with baking or parchment paper.
Step 3: In a large mixing bowl, add flour, baking powder, baking soda and sugar and add chopped apple and stir briefly to combine.
Step 4: In a separate bowl, add eggs, vanilla, oil and yoghurt and whisk briefly just to break up the egg yolks.
Step 5: Add wet ingredients to dry ingredients and gently mix with a wooden spoon until combined – but be careful not to over mix and then spoon batter into prepared tin.
Step 6: To make cinnamon topping, combine cinnamon, sugar and butter and mix together until lumpy and wet and sprinkle over cake batter.
Step 7: Bake cake for approximately 30-35 minutes or until a skewer inserted into the middle comes out clean and then transfer cake to a wire rack to cool completely.
Step 8: To make the glaze, mix together sugar and 1 tablespoon of milk and stir until smooth and if the glaze is too thick, add an extra tablespoon of milk and drizzle glaze all over the cake.
Step 9: NOTE - if you cannot get baking soda (I know I can't) use 1 to 2 teaspoons of baking powder for each 1 teaspoon of baking soda.
