  • The following recipe serves 8 people.

Ingredients

The ingredients are:
  • 210 grams plain flour (1 1/2 cups)
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda (see note)
  • 150 grams caster sugar (3/4 cups)
  • 1 cup apples (red apple, peeled and roughly chopped, approximately 1 large)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 120 ml oil (vegetable oil, 1/2 cup)
  • 120 ml Greek yogurt (1/2 cup)
  • CINNAMON TOPPING:-
  • 50 grams caster sugar (1/4 cup)
  • 1 teaspoon ground cinnamon
  • 1 tablespoon butter, melted
  • SUGAR GLAZE:-
  • 30 grams icing SUGAR, or powdered sugar (1/4 CUP
  • 1–2 tablespoons milk

How to Make

  • Step 1: Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced.

  • Step 2: Grease and line an 8 or 9 inch round cake tin with baking or parchment paper.

  • Step 3: In a large mixing bowl, add flour, baking powder, baking soda and sugar and add chopped apple and stir briefly to combine.

  • Step 4: In a separate bowl, add eggs, vanilla, oil and yoghurt and whisk briefly just to break up the egg yolks.

  • Step 5: Add wet ingredients to dry ingredients and gently mix with a wooden spoon until combined – but be careful not to over mix and then spoon batter into prepared tin.

  • Step 6: To make cinnamon topping, combine cinnamon, sugar and butter and mix together until lumpy and wet and sprinkle over cake batter.

  • Step 7: Bake cake for approximately 30-35 minutes or until a skewer inserted into the middle comes out clean and then transfer cake to a wire rack to cool completely.

  • Step 8: To make the glaze, mix together sugar and 1 tablespoon of milk and stir until smooth and if the glaze is too thick, add an extra tablespoon of milk and drizzle glaze all over the cake.

  • Step 9: NOTE - if you cannot get baking soda (I know I can't) use 1 to 2 teaspoons of baking powder for each 1 teaspoon of baking soda.
