Step by Step Method
Step 1
Combine chicken and marinade ingredients in a large, resealable bag, and marinate for 20 minutes in the refrigerator.
Step 2
To assemble; thread the skewers with chicken and vegetables, alternating between them. Discard the marinade. Grill over medium-high heat for 4-6 minutes on each side, or until a meat thermometer reaches 165°F on the thickest piece of chicken. Serve immediately with lime wedges and cilantro.
Step 3
Refrigerate any leftovers.
