Step 1

Combine chicken and marinade ingredients in a large, resealable bag, and marinate for 20 minutes in the refrigerator.

Step 2

To assemble; thread the skewers with chicken and vegetables, alternating between them. Discard the marinade. Grill over medium-high heat for 4-6 minutes on each side, or until a meat thermometer reaches 165°F on the thickest piece of chicken. Serve immediately with lime wedges and cilantro.

Step 3

Refrigerate any leftovers.

My family all loved this for dinner last night. The marinade was easy and good. I have always loved meat with vegetables. I cooked the cut up onions and bell pepper in the oven for 20 minutes to make them more tender. The meat always cooks great on kebabs but the veges are pretty close to raw.

I cut the recipe in half and then proceeded, following exactly. I loved the flavors of the marinade and using the thighs resulted in deliciously moist chicken, which I loved! I will use this recipe again! Thank you for sharing it here with us Theresa! Linda
