Step by Step Method

Step 1

Combine chicken and marinade ingredients in a large, resealable bag, and marinate for 20 minutes in the refrigerator.

Step 2

To assemble; thread the skewers with chicken and vegetables, alternating between them. Discard the marinade. Grill over medium-high heat for 4-6 minutes on each side, or until a meat thermometer reaches 165°F on the thickest piece of chicken. Serve immediately with lime wedges and cilantro.

Step 3

Refrigerate any leftovers.

These were terrific! I only skewered the chicken - I have a grill basket for veggies, so I gave the veggies a 5+ minute head start. I parboiled a couple cubed potatoes and added them to the veggies. That marinade really was perfect!

My family all loved this for dinner last night. The marinade was easy and good. I have always loved meat with vegetables. I cooked the cut up onions and bell pepper in the oven for 20 minutes to make them more tender. The meat always cooks great on kebabs but the veges are pretty close to raw.
