  • 1 1/2 pounds boneless skinless chicken thighs (cubed)
  • 1/4 cup cilantro, chopped (fresh, packed, plus more for garnish)
  • 2 limes, whole (large)
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon cumin
  • 1/4 teaspoon pepper
  • 1/3 cup oil (canola oil)
  • FOR SKEWERS
  • 1 red bell pepper, cubed
  • 1 yellow bell pepper, cubed
  • 1 red onion, cubed
  • Lime wedges and cilantro, for garnish

How to Make

  • Step 1: Combine chicken and marinade ingredients in a large, resealable bag, and marinate for 20 minutes in the refrigerator.

  • Step 2: To assemble; thread the skewers with chicken and vegetables, alternating between them. Discard the marinade. Grill over medium-high heat for 4-6 minutes on each side, or until a meat thermometer reaches 165°F on the thickest piece of chicken. Serve immediately with lime wedges and cilantro.

  • Step 3: Refrigerate any leftovers.
