Step by Step Method

Step 1

In a large bowl, toss chicken with lemon juice and salt; let stand 15 minutes. Meanwhile, place water, yogurt, herbs, peppers, ginger and garlic in a blender; cover and process until smooth. Stir into chicken mixture; refrigerate, covered, 2 hours.

Step 2

Brush onions with 2 tablespoons oil. Grill, covered, over medium heat or broil 4 in. from heat 10-12 minutes or until tender, turning occasionally.

Step 3

Remove chicken from marinade; discard marinade. Thread chicken onto six metal or soaked wooden skewers. Grill, covered, over medium heat or broil 4 in. from heat 10-12 minutes or until chicken is no longer pink, turning occasionally and brushing with remaining oil during the last 4 minutes. Serve with grilled onions and lemon wedges

Very good kabobs -- next time I will add the onions and veggies to the skewers as one of the reviewers did but these are good just as they are. Some of the onions fell through the grate and by putting them on the skewers that wouldn't happen. Thanks for sharing!

Wow, was this ever good Marra. I love the flavor of the chicken. All the flavors blended beautifully together; the onion, salt and lemon really bring all the flavors to the fore front. Lovely subtle flavors. Thanks so much for sharing. Made FYC tag game.

Very good taste, indeed and I see why it is a contest winner over at TOH! I marinated between 2.5-3 hours and it worked out, where the flavors permeated well. I used sour cream in place of the yogurt, because that’s what I had on hand. Also, because I had some fresh pineapple that I needed to use up, used it along with red peppers and onions to skewer alongside the chicken. Came out Fab! Thank you, Marra, for sharing. Made it for FYC.
