Step by Step Method
Step 1
With a very sharp knife, cut beef across grain into thin strips, 1/8-inch thick.
Step 2
Combine soy sauce, garlic and ginger.
Step 3
Add beef, toss and set aside while preparing vegetables.
Step 4
Heat oil in wok.
Step 5
Add beef mixture and toss over high heat until browned.
Step 6
Turn heat up and add vegetables.
Step 7
Toss until vegetables are tender crisp, about 10 minutes.
Step 8
Mix cornstarch with broth.
Step 9
Add to wok and stir and cook until thickened.
Step 10
Add tomatoes and heat through.
