Step 1: With a very sharp knife, cut beef across grain into thin strips, 1/8-inch thick.
Step 2: Combine soy sauce, garlic and ginger.
Step 3: Add beef, toss and set aside while preparing vegetables.
Step 4: Heat oil in wok.
Step 5: Add beef mixture and toss over high heat until browned.
Step 6: Turn heat up and add vegetables.
Step 7: Toss until vegetables are tender crisp, about 10 minutes.
Step 8: Mix cornstarch with broth.
Step 9: Add to wok and stir and cook until thickened.
Step 10: Add tomatoes and heat through.
