"Here's a salad with a lot of crunch-appeal. ;) Lots of crunchy veggies and toasted ramen or chow mein noodles... I like to make the salad dressing several hours ahead of serving and "marinate" the cooked chicken for extra YUM. ;) Are you wondering why you see broccoli in the photo I took when it isn't listed in the ingredients? I had some leftover from yesterday's dinner that I just added on a whim. :)"

Step by Step Method

Step 1

Start first by making the dressing: combine all ingredients and whisk. Add the chopped chicken and allow to marinate together for several hours.

Step 2

Combine the chopped lettuce, carrots, red bell pepper, green onions. Toss with the chicken and dressing and add the toasted ramen noodles (part in the salad and part on top as a garnish)
