The ingredients are:
  • 1 heart of romaine, chopped
  • 1/2 cup julienned carrot
  • 1/2 cup julienned red bell pepper
  • 3 green onions, sliced (include some of the green part too)
  • 1 cup chopped cooked chicken
  • Ramen noodles (1 package) crushed and toasted , or use purchased chow mein noodles
  • Dressing:
  • 2 tablespoons olive oil
  • 2 tablespoons rice vinegar
  • 1 teaspoon honey
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • 2 teaspoons Dijon mustard
  • 1 teaspoon sriracha
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried basil
  • Freshly ground black pepper

How to Make

  • Step 1: Start first by making the dressing: combine all ingredients and whisk. Add the chopped chicken and allow to marinate together for several hours.

  • Step 2: Combine the chopped lettuce, carrots, red bell pepper, green onions. Toss with the chicken and dressing and add the toasted ramen noodles (part in the salad and part on top as a garnish)
