Step by Step Method

Step 1

Heat oil in a large frying pan over moderate heat and add bacon, onion and garlic and cook and stir for 2 minutes or until bacon is crisp and then add chicken and cook and stir for 3 minutes or until chicken is browned.

Step 2

Add the boiling water, crumbled stock cube, cream, parmesan and tomato paste and then reduce heat to a simmer, stirring occasionally for 5 minutes or until sauce thickens slightly and then stir in parsley.

Step 3

Meanwhile, cook pasta in a saucepan of boiling salted water for 10 minutes or until tender.

Step 4

Add pasta to chicken mixture and toss to combine and serve topped with the extra parsley.

I did add a few extra's into the recipe, but everything else was as per the recipe. I added some semi sun dried tomato and some dried mushrooms as I did have them on hand to use up. We really did enjoy this creamy chicken pasta with a cheesy tomato and bacon flavor . This recipe has all the right flavors, the chicken and bacon work so well in this recipe and all the flavors compliment each other so perfectly. I did have leftovers which I am reheating in the oven as I write this review. Served with some garlic bread this made for a lovely evening meal that was really enjoyed by all.
