Chicken Parmesan Bundles

"When I made this I used plain bread crumbs on hand. And a Classico pasta sauce. It was easy to make and very tasty, not dry at all."

Step 1

Preheat oven to 375 Fahrenheight. Mix cream cheese, spinach, 1 cup of the mozzarella cheese and 3 tbsp of the Parmesan cheese until well blended; spread evenly onto chicken breasts.

Step 2

Starting at one of the short ends of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired. Set aside.

Step 3

Beat egg in shallow bowl or pie plate. Mix remaining 3 tbsp Parmesan cheese and the cracker crumbs in separate bowl or pie plate.

Step 4

Dip chicken bundles in egg, then roll in crumb mixture. Place, seam sides down, in a 13X9 inch baking dish sprayed with cooking spray.

Step 5

Bake 30 mins or until chicken is cooked through.

Step 6

Remove and discard toothpicks, if using.

Step 7

Serve topped with the pasta sauce and remaining 1/4 cup mozzarella cheese.

Oh my goodness!!! I remember getting a frozen spinach stuffed chicken at Costco and thinking how much we loved that. This takes that love to a whole new level. Wow, oh wow. Yummy to the last bite. I love this recipe!
