Step by Step Method

Step 1

Preheat oven to 350 degrees. Set the oven rack to the second lowest position.

Step 2

Cream the butter with both sugars, around 2 minutes. Add in the whole egg, egg yolk and vanilla; beat using electric mixer until completely and well combined.

Step 3

In a small bowl combine flour with next 5 spices; add to creamed mixture; beat until combined (this batter will be thick).

Step 4

Mix in the oatmeal, then the chocolate chips or nuts (since the batter is thick I use my hands for mixing in the oatmeal and chocolate chips or nuts).

Step 5

Scoop out heaping tablespoons of dough, then coat the dough in granulated sugar.

Step 6

Place on a greased cookie sheet, spaced a few inches apart.

Step 7

Bake 10 minutes.

Step 8

Cool on the cookie sheet then remove.

This makes quite a few cookies, and I'm glad because I only had to make 2 batches for my cookie trays. I added 1 cup walnuts to the batter, because cookies aren't cookies without them. They are delicious and chewy and easy to make too! I am so happy you posted this recipe!
