"From Recipe + - have altered slightly to omit the parmesan cheese and using all cheddar cheese and not the tasty cheese they suggested (original recipe is 1 cup tasty cheese and 1/2 cup parmesan cheese, both grated). Have included chill time in cook time. I couldn't see why these could not be made ahead to the point just before cooking (keep covered in the fridge)."

Step by Step Method
Step 1
Place the potatoes in a saucepan of covered with water and bring to the boil and boil for 15 minutes or until tender.
Step 2
Drain the potatoes and mash until smooth and then add 1 cup cheddar cheese, 1 tablespoon chopped chives and 1 egg yolk to potatoe, mix well and season with salt and pepper to taste.
Step 3
Shape tablespoon measure of mixture into croquettes.
Step 4
Combine 3/4 cup finely grated cheddar cheese in a bowl with breadcrumbs.
Step 5
Place 1/2 cup plain flour in a bowl and lightly whisked egg in a separate bowl.
Step 6
Dip the croquettes in flour, egg and then breadcrumb mix and place on a tray and chill for 30 minutes.
Step 7
Pour enough vegetable into a heavy based saucepan to reach to a depth of 5cm and heat over moderate heat.
Step 8
Deep fry in batches for 2 to 3 minutes or until golden brown.
Step 9
Using a slotted spoon, transfer to paper towels.
