Ingredients

The ingredients are:
  • 800 grams potatoes (peeled and coarsely chopped)
  • 1 cup grated cheddar cheese (also see intro)
  • 1 tablespoon fresh chopped chives
  • 1 egg yolk
  • 3/4 cup grated cheddar cheese (very finely grated)
  • 3/4 cup dried breadcrumbs
  • 1/2 cup all-purpose flour (plain)
  • 1 large egg (lightly whisked)
  • Vegetable oil (for frying)

How to Make

  • Step 1: Place the potatoes in a saucepan of covered with water and bring to the boil and boil for 15 minutes or until tender.

  • Step 2: Drain the potatoes and mash until smooth and then add 1 cup cheddar cheese, 1 tablespoon chopped chives and 1 egg yolk to potatoe, mix well and season with salt and pepper to taste.

  • Step 3: Shape tablespoon measure of mixture into croquettes.

  • Step 4: Combine 3/4 cup finely grated cheddar cheese in a bowl with breadcrumbs.

  • Step 5: Place 1/2 cup plain flour in a bowl and lightly whisked egg in a separate bowl.

  • Step 6: Dip the croquettes in flour, egg and then breadcrumb mix and place on a tray and chill for 30 minutes.

  • Step 7: Pour enough vegetable into a heavy based saucepan to reach to a depth of 5cm and heat over moderate heat.

  • Step 8: Deep fry in batches for 2 to 3 minutes or until golden brown.

  • Step 9: Using a slotted spoon, transfer to paper towels.
