Step by Step Method

Step 1

Place the lettuce in a large bowl and chill.

Step 2

Pat chicken with paper towels and then working with one thigh at a time, place the chicken between 2 sheets of plastic wrap and using a meat mallet or other heavy items (rolling pin, etc) pound to 1/4 inch thickness.

Step 3

Season with salt and pepper.

Step 4

Repeat with remaining chicken thighs.

Step 5

In a food processor or a blender pulse the crackers until they are the consistency of sand.

Step 6

Transfer them to a shallow bowl or pie dish and stir in a bit of salt.

Step 7

In another pie dish or shallow bowl add the flour.

Step 8

In a third pie dish add the beaten eggs and 1 tablespoon mustard.

Step 9

Working with one thigh at time, dredge chicken in the flour and then in the egg mixture and finally in the cracker mixture, pressing to adhere the cracker mixture to the chicken.

Step 10

Transfer to baking sheet.

Step 11

Repeat with remaining chicken.

Step 12

In a large skillet over medium high heat add enough oil to come up about 1/4" up the sides and heat. Working in batches cook chicken for a few minutes on each side or until brown and crisp.

Step 13

Transfer to wire rack.

Step 14

In a bowl whisk together the scallions, lemon juice, pinch of salt and 1 tablespoon mustard and then season with the pepper.

Step 15

Gradually whisk in the olive oil until dressing is smooth.

Step 16

Remove lettuce from the fridge and drizzle dressing over.

Step 17

Add herbs and toss.

Step 18

Divide the salad and chicken among the plates.

Step 19

Serve with lemon wedges, if desired.

This is DELICIOUS! If I didn't know the chicken was coated in Cheez-its, I wouldn't have guessed what it was. My husband doesn't like cheese - nor Cheez-its - but thought this was excellent. The chicken is flavored well, tender, with a crispy coating. The salad is awesome, too. We all loved the dressing. This will be a repeat for sure. Note: if possible, prep some items ahead of time (lettuce chopped, dressing made, Cheez-its crushed) to make it faster to prepare at dinner time.
