Step 1
To make marinade, place all ingredients in a food processor and process to a smooth paste and then transfer to a shallow dish and add salmon and turn to coat and refrigerate, covered, for at least 2 hours, or overnight.
Step 2
Heat an oiled char-grill plate over a medium heat and add salmon cook for about 3 minutes on each side, or until cooked to your liking.
Step 3
Meanwhile, cut pineapple into quarters lengthways and remove core and thinly slice and place in a bowl with mint and toss to combine.
Step 4
Serve salmon with pineapple and lime halves and garnish with mint.
