Step by Step Method

Step 1

To make the filling, in a small saucepan over medium heat, bring the water and whiskey to a boil. Stir in the raisins and vanilla. Remove from the heat, cover, and let stand for 1 hour, or until the raisins have absorbed most of the liquid.

Step 2

Preheat the oven to 375°F. Butter an 8- or 9-inch square glass baking dish.

Step 3

In a large bowl, toss the apples with the sugar, cinnamon and ginger. Stir in the raisins and cooking liquid and arrange in the prepared pan.

Step 4

To make the crumble, combine the flour, brown sugar and butter in a food processor. Pulse 4-5 times to form coarse crumbs. Stir in the oats. Sprinkle the mixture over the fruit and bake for about 40 minutes, or until the topping is golden and the apples are tender. Serve warm or at room temperature.

Step 5

To make Irish Whiskey Cream Sauce: In a deep bowl, beat the cream with an electric mixer on high until soft peaks form. Dissolve the honey in the whiskey. Fold the honey mixture into the whipped cream and spoon over the crumble.

  • For the whiskey, use a high-quality Irish whiskey for the best flavor.
  • For the apples, use tart apples such as Granny Smiths for the best flavor.

  • Instead of raisins, use dried cranberries. The benefit of this substitution is that cranberries have a tart flavor that will contrast nicely with the sweetness of the apples and the brown sugar in the crumble. The cranberries will also provide a nice pop of color to the dish.
  • Instead of Irish whiskey, use rum. The benefit of this substitution is that rum has a sweet, caramel-like flavor that will complement the other ingredients in the cream sauce. It will also give the dish a unique flavor that will set it apart from other apple crumbles.

Berry Crumble Replace the apples with 2 cups of fresh or frozen berries of your choice and reduce the sugar to 1/4 cup. Omit the ground ginger and cinnamon and add 1 teaspoon of ground nutmeg. Increase the cooking time to 45 minutes.

Tropical Crumble Replace the apples with 2 cups of fresh or frozen mango, pineapple, and kiwi. Reduce the sugar to 1/4 cup. Omit the ground ginger and cinnamon and add 1 teaspoon of ground cardamom. Increase the cooking time to 45 minutes.

RECOMMENDED DISH: Irish Colcannon Potatoes. This traditional Irish side dish is the perfect accompaniment to the Celtic Apple Crumble with Irish Whiskey Cream Sauce. It is made with mashed potatoes, kale, leeks, and butter, and is subtly flavored with nutmeg and pepper. The creamy potatoes and crunchy kale provide a nice contrast to the crumble and make it a complete meal.

RECOMMENDED DISH: Irish Soda Bread. This traditional Irish bread is a great accompaniment to the Celtic Apple Crumble with Irish Whiskey Cream Sauce. Made with flour, baking soda, buttermilk, and a pinch of salt, this bread is light and fluffy, with a slightly sweet flavor. It is the perfect complement to the tart apples and creamy whiskey sauce in the crumble.

You call it a crumble. I call it a crisp. Anyway it's delicious, and the sauce enhances the flavor so much! It was a nice ending to our Irish dinner

I scaled this back for 1 serve but found I could only eat half of it as it was a very big serve for me but I'll be polishing of the other half tonight for it is way to delicious to be wasted. I didn't make the cream though will most certainly do so next time, thank you Mikekey made for Alphabet Soup tag game. Okay had the other half with the Irish Cream, made a very small batch but would fully recommend it with the recipe put a whole new slant on the dish.
