Step by Step Method

Step 1

Toast walnuts in skillet over medium heat for 5 minutes or so.

Step 2

Place all ingredients in bowl, reserving some blue cheese to garnish top.

Step 3

Taste and adjust seasonings.

Step 4

Toss salad, garnish with reserved blue cheese.

Step 5

Serve chilled or at room temperature.

My goodness, this couldn't be any more wonderful! The only change I made was to use pecans instead of walnuts because that's what I had, and they were so fantastic I kind of don't want to make it with walnuts next time. And there will be a next time! The blue cheese pairs perfectly with the celery, and it made for an excellent summer side dish. I'm also thinking you could add some chopped rotisserie chicken for a main dish, or possibly grilled buffalo chicken.
