Step by Step Method

Step 1

Steam cauliflower in steamer basket for 4 - 6 minutes or until done.

Step 2

Preheat broiler.

Step 3

Heat oil in saucepan over medium-low heat; add onion and garlic, and cook for 5 minutes.

Step 4

Add tomatoes and capers, increase heat to medium-high and cook for 7 minutes.

Step 5

Spread tomato mixture in 2qt gratin dish, top with cauliflower and sprinkle with feta and pepper.

Step 6

Broil gratin 5 - 6 minutes or until feta is browned. Sprinkle with fresh basil or dill.

A wonderful change but I made a few changes based on what was on hand by using dried dill instead of fresh herbs and skipped the pepper flakes. Very good with chicken tonight. Thanks for sharing!

I made one serving and adjusted all the ingredients. The flavors were delicious and I really enjoyed it with my swordfish. The capers and hots gave it just the right amount of hot and salty, which is a taste I truly love. Just the right amount of everything. I will surely make these again! Lovely way to serve cauliflower! I just made half a recipe for the two of us. Instead of canned tomatoes, i had a couple of large fresh tomatoes i needed to use up, they worked perfectly and i used the dill to sprinkle over the top. Very enjoyable combination of veggies!
