Ingredients

The ingredients are:
  • 1 pound medium-sized cauliflower florets
  • 2 teaspoons olive oil
  • 3/4 cup onion, chopped
  • 2 cloves garlic, minced
  • 14 1/2 ounces low sodium chopped tomatoes (1 can)
  • 1/4 to 1/2 teaspoon dried pepper flakes (optional)
  • 2 tablespoons drained capers
  • 1/4 cup crumbled feta cheese
  • 1 1/2 tbsp chopped fresh basil or dill
  • Salt and freshly ground pepper, to taste

How to Make

  • Step 1: Steam cauliflower in steamer basket for 4 - 6 minutes or until done.

  • Step 2: Preheat broiler.

  • Step 3: Heat oil in saucepan over medium-low heat; add onion and garlic, and cook for 5 minutes.

  • Step 4: Add tomatoes, dried pepper flakes and capers, increase heat to medium-high and cook for 7 minutes.

  • Step 5: Spread tomato mixture in 2qt gratin dish, top with cauliflower and sprinkle with feta and pepper.

  • Step 6: Broil gratin 5 - 6 minutes or until feta is browned. Sprinkle with fresh basil or dill.
