""This is the 2nd of 3 recipes I'm entering from my most recent grandparentsdotcom Newsletter. This easy-fix, crunchy & unique cole slaw recipe is a part of the site's COMFORT FOODS COOKBOOK & credit was given to Patricia B. of Boerne, TX. It was 1 of a grp of recipes that were selected as contest winners for the best side dishes. This is a no-cook recipe, the prep time was not given & was estimated by me. ENJOY!"

Step by Step Method
FOR THE DRESSING
Step 1
W/a whisk, mix oil, vinegar, sugar, salt & pepper. Allow to stand & be sure to blend well again B4 adding to the slaw.
FOR THE SLAW
Step 2
Combine dressing, shredded cabbage, green onions & cashews. Chill at least 1 hr. Just before serving, add & mix the crispy rice noodles, if using.
NOTE RE YIELD: To get the stated # of servings & the right proportions for the "dressed" slaw if you opt to use a bagged slaw product, be careful to get an amt of the bagged slaw product roughly equal to 1 head of cabbage
NOTE FROM ME: I made this recipe on impulse 1 evening w/cabbage I needed to use, but did not realize I was out of rice noodles after advising that they not be left out, so the pic I took does not reflect that ingredient being used
