  • The following recipe serves 10 people.

Ingredients

The ingredients are:
  • FOR DRESSING
  • 1/2 cup oil
  • 1/4 cup white vinegar
  • 1/2 cup granulated sugar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • FOR SLAW
  • 1 head (2 to 3 pound) cabbage, shredded (may use bagged product, 1 medium head)
  • 1/2 cup green onions, chopped (green part only)
  • 1 can (8 ounce) cashew nuts (halves & pieces)
  • 1 can (3 ounce) rice noodles (La Choy suggested - optional, but my advice is don't leave them out)

How to Make

  • FOR THE DRESSING

  • Step 1: W/a whisk, mix oil, vinegar, sugar, salt & pepper. Allow to stand & be sure to blend well again B4 adding to the slaw.

  • FOR THE SLAW

  • Step 2: Combine dressing, shredded cabbage, green onions & cashews. Chill at least 1 hr. Just before serving, add & mix the crispy rice noodles, if using.

  • NOTE RE YIELD: To get the stated # of servings & the right proportions for the "dressed" slaw if you opt to use a bagged slaw product, be careful to get an amt of the bagged slaw product roughly equal to 1 head of cabbage

  • NOTE FROM ME: I made this recipe on impulse 1 evening w/cabbage I needed to use, but did not realize I was out of rice noodles after advising that they not be left out, so the pic I took does not reflect that ingredient being used
