Step by Step Method

Step 1

In a large bowl, combine chicken, cashews, apple and cucumber.

Step 2

In a small bowl, combine mayonnaise, sugar, salt and pepper. Add mayonnaise mixture to the chicken mixture and toss to coat. Place 1/2 cup on lettuce leaves or on rolls or croissants.

Daily Inspiration

Simple and delicious! Love the simplicity of this salad and all the crunchy ingredients. I did leave out the cucumber per DH's request and otherwise made as directed except for some lemon pepper to the chicken salad. I served this over baby romaine lettuce with some sliced avocado on the side. : )

I really enjoyed the combination of cashews and apples. I used leftover Thanksgiving turkey breast for the meat and English cucumbers. I really enjoyed my lunch today! Thanks for sharing!
