Step by Step Method
Step 1
Mix the sugar and oil, add eggs; beat until creamy.
Step 2
Sift dry ingredients (Darlene uses regular flour instead of cake flour) add to creamed mixture.
Step 3
Mix in vanilla, grated carrots, chopped nuts and pineapple.
Step 4
Bake in greased cake pan in 350 degree oven for about 45 minutes or until done.
Step 5
Frosting 1 box powdered sugar, stick butter, cream cheese; beat together, and thin to spreading consistency with milk.
Step 6
This cake freezes well.
