Step 1: Mix the sugar and oil, add eggs; beat until creamy.
Step 2: Sift dry ingredients (Darlene uses regular flour instead of cake flour) add to creamed mixture.
Step 3: Mix in vanilla, grated carrots, chopped nuts and pineapple.
Step 4: Bake in greased cake pan in 350 degree oven for about 45 minutes or until done.
Step 5: Frosting 1 box powdered sugar, stick butter, cream cheese; beat together, and thin to spreading consistency with milk.
Step 6: This cake freezes well.
