Step by Step Method

Step 1

Preheat oven to 350 degrees F.

Step 2

Spray a loaf pan (8 1/2 x 4 1/4 inch) with Pam or grease pan

Step 3

In a bowl combine dry ingredients (flour - cardamom).

Step 4

In a second bowl combine wet ingredients (yogurt, 1 cup sugar - oil) and whisk. Stir wet ingredients into the dry ingredients.

Step 5

Pour batter into prepared pan and bake for 50-55 minutes or until cake tests done with a toothpick inserted in center (toothpick comes clean when inserted in center of cake). Let cool in pan for 10 minutes and then finish cooling on a wire rack.

Step 6

In a saucepan over medium low heat heat the coffee with the remaining 1/4 cup sugar, heating until sugar dissolves.

Step 7

While cake is still warm, poke holes in top of cake and pour coffee mixture over top. Let it soak in and let cake finish cooling.

Step 8

If desired, prepare icing by combining remaining 2 tablespoons of coffee and a pinch of cardamom and the powdered sugar, stirring until smooth; adding more sugar if necessary. Drizzle icing over top of cooled cake.

I'll start out by saying that the cake is delicious, in spite of my major goof. I love cardamom and coffee, and this cake hits all the right notes! Unfortunately, I was distracted while making this, and added the 1/4 cup coffee to the batter! So way too much wetness there. It still rose and baked, but the outsides got too brown before the inside was fully cooked. Still tastes great, though! Can't wait to make this again, the RIGHT way! Thanks for sharing!

A delicious pound cake, unlike any pound cakes I have made, making for a lovely change and a great addition for both brunch or cake and coffee hour. If time allows am hoping to make another for Easter weekend.

This pound cake is delicious! I didn't have expresso powder so I used regular instant coffee instead and it worked out well for me. The cake is nice and moist from the yogurt, and I particularly loved the flavor from the cardamom. It just so happens to be my favorite spice, and it sure did this cake justice! Cardamom and coffee together is a favorite here. A local coffee shop makes a cardamom latte to die for. This recipe should be sold to Starbucks to replace the pound cake they sell now! Will be making this again.
