How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: Spray a loaf pan (8 1/2 x 4 1/4 inch) with Pam or grease pan

  • Step 3: In a bowl combine dry ingredients (flour - cardamom).

  • Step 4: In a second bowl combine wet ingredients (yogurt, 1 cup sugar - oil) and whisk. Stir wet ingredients into the dry ingredients.

  • Step 5: Pour batter into prepared pan and bake for 50-55 minutes or until cake tests done with a toothpick inserted in center (toothpick comes clean when inserted in center of cake). Let cool in pan for 10 minutes and then finish cooling on a wire rack.

  • Step 6: In a saucepan over medium low heat heat the coffee with the remaining 1/4 cup sugar, heating until sugar dissolves.

  • Step 7: While cake is still warm, poke holes in top of cake and pour coffee mixture over top. Let it soak in and let cake finish cooling.

  • Step 8: If desired, prepare icing by combining remaining 2 tablespoons of coffee and a pinch of cardamom and the powdered sugar, stirring until smooth; adding more sugar if necessary. Drizzle icing over top of cooled cake.
