Step by Step Method

Step 1

Cream butter and sugar until light and then add the egg, beating it until dough is thick.

Step 2

Stir in cream.

Step 3

In a separate bowl sift dry ingredients together (flour - salt) and stir into butter mixture with the cardamom. Stir until a stiff dough form. Chill dough for at least one hour.

Step 4

Shape dough into small balls ( 1 inch in diameter) and arrange on baking sheets.

Step 5

Bake in a 375 degree oven for 10-15 minutes or until golden.

Step 6

If you want you can brush balls with a beaten egg.

Rich, buttery flavor with the added bonus of cardamom. I skipped the egg wash. Great with our evening tea.

Excellent! My SIL has this same book, and I think she's made these before! So glad I now have it for my own use! These cookies are light and oh-so-tasty, especially if you love cardamom like I do! DH says you could put some nice buttercream in between two and make cookie sandwiches. Hmmm, gonna have to try that sometime! Thanks for posting!
