Step by Step Method

Step 1

Cut the bacon into 1-ich pieces and add to a large skillet along with the diced onion.

Step 2

While the bacon is cooking cut the 2 chicken breasts into chunks. This would also be a good time to heat a large pot of water for the pasta.

Step 3

Add the chicken, garlic and peas (if your using them) to the bacon after about 20-25 minutes or just before the bacon becomes crispy.

Step 4

Once the water comes to a boil add the pasta and cook until al dente

Step 5

In a small saucepan warm the 2 cups heavy cream. Once its warm add a little to the eggs just to bring them up to temperature the combine both into saucepan.

Step 6

Once the bacon has become crispy and the chicken is cooked remove the grease from the skillet. Add the cream and eggs to the skillet, stir well. Add salt and pepper. Toss in the cooked pasta. Serve and njoy.

I cut the bacon down to 1/2 lb. to make it somewhat healthier (yeah right!) and it was still delicious! I loved it and my neighbor was ever so thankful for the big bowl I brought down to her. She loved it also!
