Step by Step Method
Step 1
In large saucepan, heat oil.

Add sausage and cook, breaking up meat with wooden spoon, until golden brown, about 5 minutes.

Add mushrooms, carrots, onions, garlic and oregano and Italian seasoning.

Cook, stirring, about 5 minutes.

Season with salt and lemon pepper to taste.

Reduce heat to medium.

Pour in broth and increase heat and bring to boil, scraping up browned bits from bottom of pan with wooden spoon.

Reduce heat to medium.
Step 9
Add tortellini, simmering until they rise to the top.
Step 10
Cook until al dente.
Step 11
Add more water if needed.
Step 12
Simmer 18 minutes.
Step 13
Add spinach and cook until softened, 1 minute.
Step 14
Sprinkle with basil, parsley and Parmesan.
