Step 1: In large saucepan, heat oil.
Step 2: Add sausage and cook, breaking up meat with wooden spoon, until golden brown, about 5 minutes.
Step 3: Add mushrooms, carrots, onions, garlic and oregano and Italian seasoning.
Step 4: Cook, stirring, about 5 minutes.
Step 5: Season with salt and lemon pepper to taste.
Step 6: Reduce heat to medium.
Step 7: Pour in broth and increase heat and bring to boil, scraping up browned bits from bottom of pan with wooden spoon.
Step 8: Reduce heat to medium.
Step 9: Add tortellini, simmering until they rise to the top.
Step 10: Cook until al dente.
Step 11: Add more water if needed.
Step 12: Simmer 18 minutes.
Step 13: Add spinach and cook until softened, 1 minute.
Step 14: Sprinkle with basil, parsley and Parmesan.
