Step 1

Sauté onion in oil until soft. Add squash and stir until almost tender.

Step 2

Add chiles; simmer briefly.

Sprinkle on cheese and stir until melted.

Great side dish. I really enjoyed this simple and good recipe. I didn't have any diced peppers so used a couple of jalapeno nacho rings instead. Although it was a bit spicier I loved it. Thanks for sharing this nice keeper, Dee. Made for Best of 2019 tag, recommended by Lavender Lynn. I forgot the cheese until after I had already eaten 1/2 of it. lol.

What a wonderful twist to just plain sauteed squash. Loved the addition of onions and chilis. Had to use sharp cheddar as the cheese as what was on hand. Thanks for a new side dish.

I am always looking for recipes for hubby always plants too many! This is a simple one and very yummy! We enjoyed it, and although I only made about 1/2 the recipe for just him and me, he went back and ate the rest, and he never goes for seconds! Daily Inspiration

We enjoyed this squash recipe -- I used mild green chilies and I think the ingredients paired well together including the cheese. This recipe was simple and easy to pull together.

This did a great job for our dinner side and my entry into Side Dish challenge. My Dh loved this so much it was his favorite part of dinner tonight. The flavors in this recipe really complimented each other very well.
